Pierogi enchiladas

Ingredients
1 dozen pierogi (we chose Jalapeño Cheddar)
1 bag shredded cheese
1 small onion
1 package ground beef or Beyond Beef
1 can enchilada sauce
1 can tomato sauce
1 jalapeño
2 tsp chili powder (or to taste)
A pinch of salt

1. Pre-heat oven to 375 degrees.
2. Cook beef with onions in a pan, then add jalapeño and chili pepper. Mix well.
3. Add enchilada sauce and tomato sauce to beef mixture. Cook for 5-10 minutes, or until sauce thickens.
4. Meanwhile, makl a layer of six pierogi in an oven-safe dish (this recipe can also be increased to feed more people with multiple dozens!).
5. Top with a layer of sauce and cheese.
6. Add another layer of pierogi, and repeat with sauce and cheese.
7. Cover with foil and bake for 25 minutes.
8. Eat!
