Pierogi frittata

Ingredients
1 dozen eggs
1 dozen pierogi of your choice
Mixed vegetables (use whatever’s in the fridge or freezer!)
1 cup shredded cheese
2 tbsp whole milk dairy (milk, sour cream, yogurt)

Instructions
1. Pre-heat oven to 350 degrees.
2. Pre-cook pierogi and veggies (in separate pans). It’s important to pre-cook the veggies, as it removes the water!
3. Add veggies, cheese, and whole milk dairy to beaten eggs.
4. In over-safe dish, layer cooked pierogi.
4. Add egg, veggie, and cheese mixture.
5. Bake at 350 degrees for 30 minutes (until edges are baked and it jiggles lightly when you shake it.)
